Goat Mutton curry that has no tomato, no curd, no need for marination and still taste awesome. Here is the recipe
Ingredients
750-1000 grams of cut and cleaned goat mutton
4-5 Dry Red Chillies
6-8 medium sized brown onions, sliced thinly
4-6 cloves
2-3 green cardamom
1 inch cinnamon stick
2-3 bay leaves
2 tablespoon coriander powder
1 teaspoon black pepper powder
1-1.5 tablespoon cumin powder
1.5 teaspoon turmeric powder
1 tablespoon red chili powder (reduce it to 1/2 tablespoon as per your taste)
Salt as per your taste
6 tablespoon mustard oil
2 tablespoon garlic paste
1/2 tablespoon ginger paste
Method
Take mutton pieces in flat bottom deep vessel, add all dry spice powder, dry red chilies along with half of sliced onions and garlic paste to the mutton. Pour 2 tablespoon of oil into it, mix using spatula to ensure all pieces are evenly coated. Keep it aside.

Put a pressure cooker or a heavy bottom deep pan (which has a lid) on cook stove, add remaining oil. Once oil is hot, add all whole spices along with remaining onions. Fry till onions turns light brown. This will take about 6-7 minutes. Add mutton pieces, and on high flame with continuous stir mutton for 4-5 minutes, then lower the flame and keep stirring occasionally till oil separation starts, then add ginger paste, keep frying when mutton pieces have browned and oil is seen at bottom and sides of pan.

Add about 2 cups of water, mix well. If using a pressure cooker, cook it for 4-6 whistle on medium to high flame (approximately 20-25 minutes), if in a normal vessel, let it simmer on low flame covered for 30-40 minutes, check occasionally, if pieces are sticking, add bit of water and mix.
