Bihari Sattu is made by grinding roasted Indian chickpea with its peel. I live in Mumbai but I always use to get Sattu from Jharkand, During lockdown this was not possible, therefore, I ordered two brands available on amazon and Big Basket, now I can easily vouch for Manna Sattu brand – 100% authentic taste. Sattu is very versatile and ready to use powder – it can be mixed with milk/water and sugar/jaggery eaten like porridge, it can be mixed with water, lemon juice, salt for a quick energy drink, or use as a stuffing to make paratha; Below is recipe of Sattu paratha
Ingredients for 6-8 parathas
For Sattu Mix
About 1/2 cup Sattu
2-3 green chilies finely chopped
4-6 garlic pods finely chopped
1 small or 1/2 medium size onion finely chopped
Onion and Garlic can be easily skipped
salt as per taste
Carom (ajwain/auwa) seeds
1 tablespoon mustard oil (if you don’t use mustard oil, use 1 tablespoon any Indian pickle oil) for that pungency.
Few tablespoons of water
For dough
About 2 cups whole wheat atta
Water as required to make dough
Clarified butter (Ghee) or Oil to roast parathas
Method
Take sattu in a bowl, add all the ingredients under sattu mix except water, add water slowly till entire mix hold together but does not become dough. Using Whole wheat atta prepare your regular paratha or roti dough,


Roll 2-3 inch roti, put Sattu mixer on center, fold, dust some flour, roll it gently to 4-5 inch roti. Put it on griddle/tawa and roast both side with ghee or oil like any other paratha.



Sattu paratha can be eaten just with pickle, with curd/raita, with any other gravy vegetable curry. If you wish to carry it during travel make it without onion and garlic.
