Dhuska

Indeed a very funny sounding name, but a simple recipe where main ingredients are raw rice and channa dal (Indian chick pea -dehusked, split into lentils). About a year back, I was talking to my mom and discussing about non-wheat flour (gluten free) based recipes, at this my mom said why don’t you make Dhuska – a very popular recipe in Bihar and Jharkand, and here is the recipe

Ingredients

2 cup any raw rice

1 cup channa dal

salt as per taste

black pepper as per taste

1/2 teaspoonful turmeric powder

1/2 teaspoonful red chili powder (if spicier version add more of it)

1/2 teaspoonful whole cumin

Method

Wash rice and dal and soak them together for 6-8 hours (if wish to make for morning breakfast, soak overnight)

Grind them together with enough water to have pouring consistency.

Add all the spices.

Heat oil in deep pan wok. Using a laddle, pour into the oil, after one side fried, turn slowly,

Take out from oil, your Dhuska is ready, note: not every dhuska will swell but thats’ perfectly OK – it won’t impact the taste.

serve with tomato ketchup, or green coriander chutney or with potato curry.
