Baigan bharta (Baigan is Brinjal / Eggplant, whereas bharta meaning mash). An easy recipe that goes really well with stuffed Mooli (Raddish) or Sattu (black gram flour) parathas
Ingredients
2 Large Purple Baigan
2 medium size ripe tomatoes
8-10 garlic pods
2-3 Green chilies finely chopped
2 tablespoon mustard oil
Salt as per taste
Method
Switch on the gas stove, grease the baigan using a little oil, and put it directly on flame for roasting. Note: Metallic frames are also available in market to roast baigan, if you have one, use.
Keep turning the baigan as it roasts, roasting is complete, when baigan has shriveled completely in all direction and turned dark purple with black tinge. Once done, keep it aside to cool down

Repeat the process for second Baigan. Now, roast the tomatoes in similar manner either using a frame or holding it with pair of tongue.

Repeat the step for second tomato. Once, Baigan and Tomato have cooled down. Peel them, Take mashed tomatos, baigan, garlic pods, green chilies and mash them thoroughly using a spatula, after that add salt and oil, mix again. Your delicious baigan bharta is ready.
