Baigan is eggplant / brinjal, a simple recipe where onion is Banned, garlic is Must have and tomatoes (Tamator) get special mention
Ingredients
1- Purple big Brinjal (any other variant will do) cut into medium size pieces
2-3 Medium Sized Potatoes peeled and cut into medium size pieces
1 Medium Tomato finely chopped
1/4th teaspoon of each 1) Ajwain seeds 2) Saunf (Fennel) 3) Methi (Fenugreek) seeds 4) Jeera (Cumin) Seeds and 5) Sarso / Rai (Mustard) seeds (black or yellow either will do) mixed together
Note: I mix these in bulk and store
2 Dried Red Chilies broken into halves
1 Tablespoon Garlic paste
2 Tablespoon Mustard oil
1 teaspoon turmeric powder
1/2 teaspoon red chili powder
Salt (as per taste)
About 1/4th – 1/2 cup water
Method
Take a wok, put it on stove on medium flame, Add oil.
Once oil is hot, add dried red chilies and mixture of whole spices, let it splutter,
Add brinjal and potatoes, Add garlic paste and powder spices,
Keep frying / stirrer for 6-10 good minutes, till raw aroma is gone and oil separation is seen
Note: garlic paste, and powder spices can be mixed with 1 tablespoon of water and added, easy to coat the vegetables
Add chopped tomatoes, mix, cover
After 5-7 minutes, remove the lid, if tomatoes have become mushy, give a good mix and add water,
Cover again and let it simmer on slow till potatoes & brinjal are cooked (about 5 minutes) and water is almost evaporated.
Serve this with Roti or Paratha or Poori or along with Rice & Lentil curry. I love this Alu Baigan Tamator with Poori 😊
